Yum! Yum!

This is one of my favorite cakes to make, and perfect for July 4th. The cake is a doctored-up cake mix, so it's easy to make. The frosting is a lot of butter and a lot of sugar- can't go wrong with that! I got the recipe from Southern Living. Enjoy!



TRIPLE-DECKER STRAWBERRY CAKE
1 package of white cake mix
1 (3oz) package strawberry gelatin
4 large eggs
1/2 cup sugar
1/4 cup all-purpose flour
1/2 cup finely chopped fresh strawberries
1 cup vegetable oil
1/2 cup milk
Beat the cake mix and next 7 ingredients at low speed with an electric mixer 1 minute. Scrape down the sides, and beat at medium speed for 2 more minutes, stopping to scrape down the sides, if needed.
Pour batter into 3 greased and floured 9-inch cakepans.
Bake at 350 degrees for 23 minutes or until cakes spring back when lightly pressed with a finger.
Cool in pans on wire racks for 10 minutes. Remove from pans; cool completely on wire racks.
Spread Starwberry Buttercream Frosting between layers and on top and sides of cake. Serve immediately or chill up to 1 week.
STRAWBERRY BUTTERCREAM FROSTING
1 cup butter, softened
2 (16 oz) packages powdered sugar, sifted
1 cup finely chopped fresh strawberries
Beat butter at medium speed with an electric mixer 20 seconds or until fluffy. Add powdered sugar and chopped strawberries, beating at low speed until creamy.

Joy ... I had so many requests for your recipe and I didn't want to have to write it out ... knew I had seen it on your blog, so I kept going back month by month to find it ... and I FINALLY did! :) Anyway, I've sent it to ALL my Forsyth friends ... and mother is LOVING that some was left to bring home to her.
